vegetable rice recipe | mix veg rice | quick one pot vegetable rice with step by step photo and video recipe. pulao or rice recipes are very common lunch box recipes for many indian households. there are many flavoured and aromatic indian pulao recipes prepared with one hero vegetables or ingredient. however, this recipe is unique and made with a mix of vegetables and spices known as vegetable rice recipe.
the recipe for mix veg rice is very similar to my previous post of vegetable pulao recipe with some subtle changes. basically, the rice is pre-cooked and stir-fried with finely chopped veggies. whereas as in pulao recipes, dry spices and leafy vegetables are grounded to form a fine paste and cooked with raw rice. the flavour and spices are infused to the cooked rice and hence make it aromatic and tasty. but you may not have so much time and luxury to follow this detailed recipe. hence you have this quick and easy instant vegetable rice recipe. perhaps it can also be termed as indian version of the stir-fried recipe with spices and indian vegetables.
furthermore, some easy tips and variations for a perfect and flavoured vegetable rice recipe. firstly, the recipe makes it perfect with soakedbasmati rice. you can also stir fry with leftover rice but ensure to separate the rice. secondly, make sure to finely chop the desired veggies so that it easily get cooked in wok. but do not overcook the veggies and it should hold its crunchiness and texture. lastly, if you desire and side dish with this rice recipe, serve it with moong dal or perhaps with dal tadka recipe.

Ingredients
- 3 tsp oil
- 1 bay leaf / tej patta
- 1 inch cinnamon / dalchini
- 2 pods cardamom / elachi
- ½ onion, finely chopped
- 1 chilli, slit
- 5 beans, chopped
- 1 carrot, chopped
- 2 tbsp peas / matar
- ¼ capsicum, chopped
- 1 cup basmati rice, soaked 20 minutes
- 2 cup water
- 1 tsp salt
- 1 tsp lemon juice
- 2 tbsp coriander, finely chopped
Instructions
firstly, in a large kadai heat3 tsp oil and saute 1 bay leaf, 1 inch cinnamon and2 pods cardamom until they turn aromatic.
now add½ onion, 1 chilli and saute until they turn translucent.
further add5 beans, 1 carrot, 2 tbsp peas and ¼ capsicum.
stir-fry for 2 minutes without mashing the vegetables.
now add 1 cup basmati rice (soaked for 20 minutes).
roast for 2 minutes without breaking rice.
furthermore, add2 cup water, 1 tsp salt and 1 tsp lemon juice.
mix well, cover and simmer for 20 minutes. or pressure cook for 2 whistles on medium flame.
after 20 minutes, give a stir. the rice will be still be moist.
turn off the flame, cover and rest for 10 minutes.
finally, add 2 tbsp coriander leaves and enjoy vegetable rice with raita or curry.

notes:
- firstly, add vegetables of your choice along to make it more nutritious.
- also, increase the amount of green chilli to make it spicy.
- furthermore, vegetable rice can be pressure cooked for 2 whistles if you do not prefer simmering.
- finally,vegetable rice recipetastes great when prepared with basmati rice.
